Brrrrrrrr…

This morning I woke up to a cold house, aka the worst feeling everrr. This morning I ate some banana bread that I baked yesterday (more on that in a sec).

After running around the house in a thousand layers, I headed off to school.

After school, I sat at Starbucks and finished my homework while my brother had practice.

Ok so I mentioned above that I baked banana bread yesterday. My French teacher gave us an assignment last week where we were to write out a recipe in French. Being the health nut I am, I wrote a recipe on healthy banana muffins. After receiving our papers, my teacher thought it would be a great idea to give us an extra credit project. We were to film a video of us making the recipe that we turned in and bring in the results. I was so excited (I get easily excited about things… for those of you who have not already noticed)! We were given 4 weeks to finish it… but I decided to do mine last night.

Healthy Banana Bread Muffins

(Makes 6 muffins)

Ingredients:

  • ¾ c. whole wheat flour
  • ½ c. old-fashioned oats
  • ¼ c. firmly packed brown sugar
  • 2 tbsp. ground flax seeds
  • 1 tsp. cinnamon
  • ½ tsp. baking soda
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • 1 egg white
  • 2 ½ tbsp. canola oil
  • ¼ tsp. vanilla extract
  • 1 small banana (mashed)
  • ½ c. milk
  • 1/4 c. chocolate chips (I used milk chocolate)
  • 1/3 c. walnuts

Directions

  1. Preheat oven to 350 degrees
  2. Line muffin pan with paper muffin cups
  3. Combine whole wheat flour, oats, brown sugar, flax seeds, cinnamon, baking soda, baking powder and salt
  4. In a separate bowl, mix together egg white, oil, vanilla, banana and milk
  5. Gradually mix flour mixture into egg mixture until batter is combined
  6. Add in the chocolate chips and walnuts
  7. Divide the batter into the six muffin cups
  8. Bake for 15 – 18 minutes

I found this recipe on Julie’s blog but added the chocolate chips and walnuts to the recipe in order to make it more like banana bread. The final product tasted great especially for being healthified (is that even a word?)! Although the muffins were healthier than typical banana bread, they taste healthy… so make sure that you are baking for yourself or other health conscious people. My brother tried one and said “it’s good… but I can tell that it is healthy” which is a big no-no for my brother. Besides that, I liked them and so did my French teacher! Give them a try and tell me what you think. Do you have a healthy banana muffin recipe that does not taste healthy?

Ok, so some of you may be wondering how my video turned out. After debating on whether or not I should show you all my video, I decided that I would. Before you watch it I just want to give you a heads up that I sound like a squirrel. Not really. I just sound strange…. maybe I was feeling camera-shy?   1. I love that you drink your smoothies out of a mason jar. I drink EVERYTHING out of my masons. These muffins looks so good! It’s cold in my town…but not THAT cold..yikes!
